What do you do on a Saturday night when you can’t really walk and have just finished a monthly stock up trip to Costco?
Cook up a storm!
While Rob prepared for his first day with kids happening on Monday, I got busy in the kitchen trying out some new recipes. Now the fridge is stocked with healthy food that’s ready to be eaten in a grab-and-go fashion. My favorite type of fridge!
Here is what I made: (I modified the linked recipes to fit what I had and to lessen any cheese, butter, flour ingredients.)
- Breakfast Cups – Rob absolutely loved these!
- Spinach Balls – I ate the whole batch throughout today and had to make a second one to last the rest of the week. Seriously delicious and seriously healthy. Make these for yourself ASAP.
- Protein Bites with apples, strawberries, and chia seeds
- Zucchini Tots – A little bland, but still tasty and healthy.
- Cauliflower Pizza Crust – Mini-sized and in the freezer for quick, guilt-free dinners. (no picture, sorry!)
Following the mess I made in the kitchen, I promptly passed out…on the new pillows bought at Costco earlier.
That’s right, Saturday nights in my household are rockin’. In fact, it almost beat Friday night, which resulted in this:

Great recipes! I really would l like the spinach balls recipe but I can’t find it. What am I doing wrong? I clicked on the Village link to get the recipe but still don’t see it. Thanks for the great ideas Brooke!
I used her spinach burger recipe and converted it to balls instead of patties that I baked. I will post the recipe on the blog later today.
