Spinach balls used to be a staple during my family’s Christmas holidays. They were delicious, addictive, and laden with butter and stuffing.
When I found this recipe on Pinterest, I was ecstatic. A healthy, iron-packed version? I’m in.
A few of you asked about the specific spinach ball recipe I used on Saturday, so I thought I would share. I didn’t do exact measurements of anything, so these are guesstimates.
Iron-Packed Spinach Balls
Ingredients
- 2 cups spinach (frozen or freshly chopped)
- 1/4 cup onion (optional)
- 1/2 cup bread crumbs
- 1/2 cup parmesan cheese
- 2 egg whites, 1 full egg
- salt and pepper to taste
Directions
1. Chop the fresh spinach, or prepare the frozen spinach.
2. Add all the ingredients.
3. Mix all the ingredients together.
4. Roll into balls and lay on parchment paper.
5. Back at 350 for 20 minutes, or until the bottoms are slightly browned.
6. Let cool and enjoy!
You can store these in the fridge and nuke them in the microwave, or just eat them cold. They are just as tasty! Especially with some tomatoes, protein bites, feta, and pretzel chips ala my snack today.

I have been on a mission to make the perfect spinach ball, and I continue to fail. Not that my creations are horrible, but I haven’t achieved what I’m aiming for. There is a restaurant near me that serves them and they are the best thing I’ve ever had and apparently impossible to recreate. I will have to try this recipe.

They’re not bad, I think. Maybe a bit of tweaking so there is a little less egg?
